A knife like from Grosi's kitchen: I discovered exactly such a knife at the Klötzli Knifemakers.
It is made by hand in the workshop of Klötzli Messerschmiede: A small, handy kitchen knife in the size between the well-known small carvers and the proven large kitchen knives. A knife that we think the women of the Klötzli family would particularly enjoy. Particularly finely ground by hand and very sharply honed, - as it should be!
The blade is - as in grandmother's time - made of non-stainless steel and specially ground thin. This means that the blade discolours very quickly. This is normal and cannot be avoided. The knife should be cleaned quickly after each use and dried well to avoid major rust stains.
By the way, non-stainless steel gives a unique 'bite' to the cut, as the steel always corrodes a little. This results in a typical sharpness.
